Western Omelet
2 eggs or Egg Beaters
1/4 cup cooked or raw broccoli
1/4 cup chopped onion
1/4 cup chopped green peppers
1/4 cup sliced mushrooms
1/4 cup low fat cheese
1 teaspoon bacon bits
1 teaspoon olive oil
salt and pepper
- Whisk all the ingredients well
- In a warm skillet (coated with cooking spray or Pam) add 1 teaspoon of Olive Oil
- Add the mixture
- Cover for about 5 minutes
- Check to see that it looks cooked and flip over to cook the other side
- Cover for additional 5 minutes
- Salt and pepper to taste
This can be enjoyed as a weekend Breakfast, Lunch, or Dinner
